Ingredients Needed
- All-purpose flour, as needed (for rolling)
- 1 sheet store-bought puff pastry, thawed (we like Dufour)
- 24 to 30 pepperoni slices, halved
- 1 cup (120g) mozzarella cheese
- Egg wash (1 large egg whisked with 1 tablespoon / 15ml water), as needed
- Crushed red pepper flakes (optional)
- Pizza sauce (store-bought or homemade), for serving
How To Make Puff Pastry Pizza Bundles
- Preheat the oven: Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper.
- Prepare the pastry: Roll out the puff pastry on a lightly floured surface to about ⅛-inch (3mm) thick. Cut the sheet into 16 equal squares and transfer to the prepared baking sheets. Chill one baking sheet in the fridge while you work on the other squares.
- Fill the squares: Dock each square all over with a fork. Add 3-4 slices of pepperoni and 1 tablespoon (15g) of mozzarella cheese in the centre of each square. Fold one corner towards the centre, brush the exposed dough with egg wash, then fold the opposite corner, pressing to seal. Repeat with all squares, then brush with egg wash.
- Bake: Transfer to the oven and bake for 13-15 minutes, or until golden and puffed. Cool slightly before serving with warmed pizza sauce for dipping.

Recipe Tips
- Thaw the pastry completely: Make sure the puff pastry is fully thawed before using. If it’s too cold, it will be hard to roll out and may not puff up properly when baked.
- Dock the pastry: Use a fork to dock (poke holes) in the dough before baking. This will prevent air bubbles from forming and help the pastry bake evenly.
- Don’t overfill: Be careful not to overstuff the bundles with cheese or pepperoni. Too much filling can cause the pastry to open up while baking.
- Use a pastry brush for egg wash: Brush the edges of the pastry with egg wash to create a beautiful golden crust. Make sure to seal the corners well before brushing.
- Serve immediately: These bundles are best enjoyed fresh out of the oven, when the pastry is crispy and the cheese is melty. Serve with hot pizza sauce for dipping!
How To Store And Reheat Leftovers?
- Refrigerate: Let the leftover puff pastry pizza bundles cool to room temperature. Then, store them in an airtight container in the fridge for up to 2 days.
- Freeze: After baking, let the bundles cool completely. Place them in a single layer on a baking sheet and freeze until solid. Then transfer to a freezer bag for up to 1 month. Thaw in the fridge before reheating.
- Reheat: Preheat the oven to 350°F (175°C). Place the bundles on a baking sheet and bake for 5-7 minutes, or until the pastry is warm and crispy.
