Recipe Tips

  • Use cold puff pastry: Keep the pastry cold before baking so it puffs up nicely and stays flaky.
  • Don’t skip the egg wash: It helps the pastry turn golden and shiny—don’t forget the sides too!
  • Cook bacon until crispy: Soft bacon will turn soggy inside the pastry, so make sure it’s well-cooked.
  • Seal the edges well: Press the dough tightly around the Brie to stop cheese from leaking out.
  • Let it rest before cutting: Wait 5–10 minutes after baking so the cheese doesn’t spill everywhere when sliced.

How To Store And Reheat Leftovers?

  • Refrigerate: First, let the leftover puff pastry Brie cool until it reaches room temperature. Then place it in an airtight container and refrigerate for up to 3 days.
  • Reheat: Preheat your oven to 325°F (160°C). Place the Brie on a baking sheet and heat for 10–15 minutes until the pastry is warm and the cheese is soft again.
