Ingredients Needed
- 8 mini brie rounds (about 1½–2 in / 4–5 cm each)
- 1 sheet puff pastry (store-bought or homemade, about 10 x 10 in / 25 x 25 cm)
- 4–8 tbsp honey (½–1 tbsp per piece, plus extra for drizzling)
- 1 egg, beaten (for egg wash)
- Chives, finely chopped, to taste
How To Make Brie Upside Down Puff Pastry
- Preheat the oven: Set your oven to 400°F / 200°C and line a baking tray with parchment paper.
- Roll and cut the pastry: Lightly roll out the puff pastry sheet to increase its size by about 50%. Use a 3½ in / 9 cm circular cutter to cut 8 rounds.
- Add honey and brie: Place ½–1 tablespoon of honey in 8 small dollops spaced apart on the lined baking tray. Lightly score each mini brie round and place them flat-side-down over the honey.
- Wrap with puff pastry: Cover each brie piece with a pastry round, gently pressing the edges to enclose the cheese. Pinch the edges with a fork to seal well.
- Brush with egg wash: Brush the tops of the pastry with the beaten egg for a golden finish.
- Bake: Bake in the preheated oven for 20–22 minutes, or until puffed and deeply golden.
