Ingredients Needed

  • 10 oz (280g) sheet puff pastry
  • 1/2 cup (120ml) pizza sauce
  • 4 slices ham, chopped
  • 2–3 slices salami, chopped
  • 4 small cremini mushrooms, sliced
  • 6 black olives, sliced
  • 1 cup (100g) shredded mozzarella cheese
  • 3 tbsp basil pesto, to serve

How To Make Pizza Puff Pastry Bites

  1. Preheat the oven: Set the oven to 375°F / 190°C / Gas Mark 5 (no fan).
  2. Prepare the pastry: Place the puff pastry on a lightly floured sheet of parchment paper. Roll out the shorter edges slightly to widen the dough.
  3. Cut the pastry: Slice into 15 squares. Use a small knife to lightly score (without cutting through) the edges of each square to create a border.
  4. Add toppings: Spread 1 teaspoon of pizza sauce in the centre of each square. Top with chopped ham, salami, mushrooms, and olives.
  5. Bake the bites: Place on a baking tray and bake for 10 minutes.
  6. Add cheese and finish baking: Sprinkle shredded mozzarella over the bites and bake for another 15 minutes, or until golden and puffed.
  7. Serve: Spread basil pesto over the pastries and enjoy!

Recipe Tips

  • Use cold puff pastry: Keep the pastry cold before baking to ensure it puffs up nicely and stays flaky. If it gets too warm, chill it in the fridge for 10 minutes before baking.
  • Don’t overload with sauce: Too much pizza sauce can make the pastry soggy. A small teaspoon per square is enough.
  • Score the edges properly: Lightly scoring the edges without cutting through helps create a raised border, making the bites look and bake better.
  • Bake in two steps: Baking first without cheese helps the pastry crisp up, then adding cheese later prevents it from burning.
  • Serve fresh for best texture: These bites are best enjoyed warm while the pastry is crisp and flaky. If reheating, use an oven, not a microwave, to keep them crispy.

How To Store And Reheat Leftovers?

  • Refrigerate: Let the leftover pizza puff pastry bites cool to room temperature. Then, store them in an airtight container in the fridge for up to 3 days.
  • Freeze: After cooling, place the bites in a single layer on a tray and freeze for 1 hour. Then, transfer them to a freezer-safe container or bag and store for up to 2 months.
  • Reheat: Preheat the oven to 350°F / 175°C. Place the bites on a baking tray and heat for 5–7 minutes until warm and crispy.
