Ingredients Needed

  • 1 (450g / 1 lb) package puff pastry (2 sheets), thawed
  • 2 apples, peeled and thinly sliced
  • 3 tbsp (42g) butter, melted
  • 2 tbsp granulated sugar (caster sugar)
  • 1 egg + 1 tbsp water (for egg wash)
  • ½ cup (120g) apple jelly

Homemade Almond Paste:

  • 1 cup (100g) almond meal/flour
  • ¾ cup (90g) powdered sugar (icing sugar)
  • ¼ tsp almond extract
  • 1 egg white

How To Make Puff Pastry Apple Almond

  1. Preheat the oven: Preheat your oven to 200°C (400°F). Line two large baking trays with parchment paper.
  2. Make the almond paste: In a food processor, blend almond meal, powdered sugar, almond extract, and egg white until smooth. If using store-bought almond paste, mix in an egg white and a splash of vanilla extract to soften it.
  3. Prepare the apples: Peel and thinly slice the apples. You can also use pears as a substitute.
